In order to make Mam’Zelles Bulles, a sparkling natural wine to go with the famous…Tarte Tatin! Or yet again, to be able to plant a long-gone grape variety, the Genouillet, we have to step aside from our dearest AOCs.
And so, we try out new recipes, which sometimes turn out great at first shot, while other times, they need polishing year after year. Either way, it’s thrilling to experiment!
